If you pass thru the Carmel market around the center you can’t ever miss the bourika stand. You will recognize the shouting around, Boureka Boureka Boureka, which overcomes even the hectic market fuss.
Bourika (or Börek) is Turkish filo leaves in various fillings fried in deep oil. In the Tel-aviv stand you will find it with potatoes, egg (that will become runny after the frying) and cheese, all topped with peppers and tomatoes and wrapped in a pita, what can I say…perfection.
With a 10 nis price tag you can’t really get better than this, a great option for a starter and experimenting with the market food.
